As of 2017, Gran Malvazija leaves the wood completely and matures exclusively in stainless steel with slightly longer contact with fine sediment. Extreme dedication to detail and fine- tuned and metered maturation in stainless steel and resting in the glass fills the wine and gives it a complex and developed aroma, but without the wood to impose its own, the wine retains much more information about the terroir, the soil and the position from which it comes. Creaminess is obtained from yeast, so the fruit aromas are less sharp and in better harmony with the rest of the wine.
