Plješivica is the best locality for sparkling wines in our country. The soil and the microclimate are very suitable for wines with elevated acids, which, without any difficulty produce solid textures after second fermentation, with enviable acids and aromas. Brut sparkling wine, made by the Croatian winemaker Šember, was produced using the classic method of bottle fermentation and was aged for three years on yeasts. The color is already slightly golden, and the bubbles are tiny. The white stone fruit is as strong as the aromas of brioche. The complexity is emphasized by light minerality.
